Simple Scalloped Potatoes – Easy and Super Cheap!

As you may have been able to tell from all of my food posts and recipes, I like easy dishes the best.  So when my younger sister was nice enough to show me how to make scalloped potatoes in less than 15 minutes for our little dinner for two, I was all over it!

Ambi’s Scalloped Potatoes

  • Large potato – less than $1
  • Milk (1-2 cups max) – less than 50 cents
  • Flour (two handfuls) – less than 50 cents
  • Olive oil (drizzle) – less than 50 cents
  • Salt to taste – negligible
  • Pepper to taste – negligible
  • Garlic to taste – negligible
  • Total Cost = About $2.00

1.  Slice the potato thinly so they will cook quickly.

2.  Spread out potatoes in a frying pan (we used our 12 inch nonstick sauté pan).  Fill the very bottom of the pan with milk while the heat is on high.  Drizzle the top of the potato slices with olive oil and sprinkle with salt and pepper to taste.    Turn the heat to medium when you see the first bubbles after a little more than a minute or two (milk heats fast).

3.  After about 5 minutes you will notice most of the milk has boiled down.  Turn the heat up again, add some more milk, and sprinkle one to two handfuls of flour on top.  Lightly stir the flour and potato slices into the milk to thicken the milk.  Then turn the heat to medium again.

4.  In about another 5 minutes, test a potato slice to make sure they are nearly cooked.  Sprinkle some garlic to taste at this point and let simmer for another minute or so.

5.  Enjoy!  When we did this on Monday with just one large potato, we ended up with 4 servings.  It covered dinner for the both of us and a healthy leftover portion for my lunch the next day.

    This looks yummy! I am going to try this tonight. I was actually thinking of what side I could make with the chicken that we are having tonight.

    Bit high on the carbs, but sounds delicious and filling.
    Add a serving of fresh veggies, some celery and carrot sticks or salad and a fruit/fruit salad and you have a great meal.
    I take a chance and buy those big tubs of salad mixes from Sam’s. Immediately when I get home, I spit the contents into another clean plastic tub lined with napkins (sorting out any mushy-looking leafs, usually the red ones). I then add a napkin or paper towel to the original tub. Turn both upside down and place in middle area of refrigerator. Now the salad will keep for a week or more. I then take out a handful of salad and cover up a side of my plate at lunch/supper. I would place the scallop potatoes on the other side, then slice up some celery sticks and carrot sticks on the other side.
    If you can, buy the celery hearts from Sam’s for $3 and the big bags of uncut carrots for another $3. Take out some when you get home, clean, peal, slice, and place in a pitcher of water. You now have instant snacks. Especially if you take a quart of nonfat yogurt (buy at local store, Sam’s is too high), tip it into a strainer lined with a paper towel over small mixing bowl, cover with plastic and sit in the refrigerator for 12-24 hours. Put the thick yogurt back into its clean container. Save the liquid whey to use as buttermilk (for pancakes, …) or feed to dog with its kibble. Take a couple of tables spoons and mix with olive, grapeseed, pumkin seed, or any oil, some cumin, onion powder, garlic powder to taste. Mix and use as a great low cal dip for those celery and carrot sticks. For a quick desert, take this yogurt and add cinnamon and honey for a great apple dip.
    For $16 you will have enough salad, celery and carrot sticks with greek yogurt to last over a week (not including any exotic oils you can always borrow from some foodie).
    Now I am hungry, sigh.
